RECIPE OF THE WEEK:
#SOBikini Gluten-Free Cauliflower Pizza Crust
Makes 1 9-inch round pizza crust

 

1 cup cooked cauliflower (see instructions)
1 cup shredded mozzarella cheese
1 large egg, beaten
1 teaspoon fresh oregano leaves, chopped
1/2 teaspoon crushed garlic
1/2 teaspoon sea salt
pinch black pepper
olive oil (optional)
pizza sauce, shredded cheese, and choice of your toppings

 

Prepare cauliflower: Take 1 large head of fresh cauliflower, remove stems and leaves, and chop into florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-pulse or you will puree it. (If you don’t have a food processor, you can grate the whole head with a cheese grater.) Place the riced cauliflower into the microwave safe bowl and microwave for 8 minutes. There is no need to add water. One large head will produce about 3-4 cups cauliflower. The remainder can be used to make additional pizza crusts, or just cut what you need for the pizzas and roast the remaining cauliflower in the oven at 400* for 30 minutes.

 

For crust:
Preheat oven to 450*. Line baking sheet with parchment paper. In a medium bowl, stir together 1 cup of cooked cauliflower, egg, and mozzarella. Add oregano, garlic, salt, and pepper. Press into a 9-inch round circle on prepared baking sheet. Brush lightly with olive oil, if desired.

 

Bake for 15 minutes or until crust is lightly browned.

 

Top with your favorite toppings (if using meats like sausage or chicken, make sure they are pre-cooked before spreading on to pizza crust). Change oven to broil and broil about 2-3 minutes or until toppings are lightly browned and any additional cheese has melted.
